Ingredion has launched three new clean label texturising starches suitable for use in pale-coloured or delicately flavoured applications.
Novation Lumina functional native starches have been designed to support food and beverage manufacturers in making natural claims and can enable them to formulate clean label products with “excellent shelf life and freeze/thaw stability”.
Said to deliver viscosity and gel strength comparable to that of modified starches, the ingredients are designed to perform across the full range of processing conditions and are suitable for bakery cream fillings and fruit preparation as well as sauces, dressings, alternative dairy and UHT products.

The starches can be labelled as ‘corn starch’ or ‘corn flour’, are non-GM and are naturally gluten-free.
Ingredion research suggests that flours and starches rank in the top ten of the most consumer-accepted ingredients.
Earlier this year, Ingredion acquired US-based potato starch manufacturer Western Polymer to broaden the portfolio and client base of its speciality ingredients portfolio.
Washington-headquartered Western Polymer produces native and modified potato starches for food and industrial applications, as well as modified tapioca starches, made at three manufacturing sites located in the US.
