At Food Ingredients Asia 2019, KMC revealed how it is aiming to take advantage of plant-based trends and set a new standard in the market with its ingredients.
The Danish company presented its new EmulsiForm CM 7220 solution, which combines the emulsifying properties of potato-based starches with plant-based emulsifiers for use in various powdered creamers.
Stig Groven, technical sales director at KMC, revealed the challenges that the firm had to overcome when developing its ingredients.
“There’s a lot of things you have to substitute to make a vegan product, and we can do that and we can make all kinds of cheese-like vegan products,” he said.
He added: “You have to find the same functionalities in plant-based starch products as you may find in some other animal products that are typically of protein origin, so it’s a really a challenge to understand your functionality in your product, the chemistry in your product, the functionality in the final application and how our products will influence on a complex food matrix.”
