Puratos has announced the launch of Smoobees, a new range of inclusions that are said to offer a creamy texture and rich taste.
The Belgium-headquartered ingredients manufacturer said the soft beads allow bakers to add a soft and smooth texture to baked goods without injection equipment.
Three Smoobees flavours – lemon, blueberry and caramel – are being launched across various European countries this month.
Through a recent survey focused on the bakery, patisserie and chocolate sectors, Puratos identified the latest consumer trends to hit the market. “One trend which emerged from the survey was the growing importance of texture. For consumers, texture is now the new taste,” said Puratos CEO Daniel Malcorps.
Three Smoobees flavours are available: lemon, blueberry and caramel.
“Through Smoobees, we have transformed this trend into a real-world innovation that can easily be used in a professional baking environment.”
Puratos said Smoobees allow food producers to address the challenges of adding inclusions to cakes without having to adapt their production processes.
Boris Willo, head of patissiers at Puratos, said: “Existing inclusions often fail to deliver the desired flavour intensity or the wanted natural flavour profile patissiers are looking for. With Smoobees, we can now imagine including any kind of flavour inside cakes, opening the creative potential for new creations.”
